Iced Berry Oatmeal Breakfast Muffins
|Non Fat Vanilla Yogurt||1oz||6oz|
|Vanilla Extract||1/3 tsp||2 tsp|
|Olive Oil||0.5 tbsp||0.3 cup|
|Sugar||0.75 tbsp||0.4 cup|
|Wholewheat Flour||1.5 tbsp||1 cup|
|Oats||0.5 cup||3 cups|

Preheat oven to 350 degrees.
In a stand mixer or by hand, mash the bananas so no chunks remain. Mix in the egg, yogurt, vanilla extract, olive oil, and sugar till smooth.
Sift together the whole wheat flour, oats, and baking powder. Combine the wet and dry ingredients.
Fold in the berries and walnuts (if desired) and bake for 25 minutes.
If you want the extra touch of the powdered sugar glaze, mix together powdered sugar, a bit of milk, and vanilla extract until you get the right consistency. Drizzle over the muffins. Enjoy!
