One Pan Chicken and Veggies
|Mixed Bell Peppers||1 cup||6 cups|
|Broccoli Florets||1 cup||6 cups|
|Tomatoes||0.5 cup||3 cups|
|Coconut Oil||2 tbsp||12 tbsp|
|Salt||0.5 tsp||2 tsp|
|Pepper||0.5 tsp||2 tsp|
|Italian Seasoning||1 tsp||6 tsp|
|Paprika||0.25 tsp||1.5 tsp|
Preheat oven to 500 degree F.
Chop all the veggies into large pieces. In another cutting board chop the chicken into cubes.
Place the chicken and veggies in a medium roasting dish or sheet pan. Add the coconut oil, salt and pepper, italian seasoning, and paprika. Toss to combine.
Bake for 15 minutes or until the veggies are charred and chicken is cooked.
